Chicken and Shrimp fried rice is a classy dish that makes a full meal. You just need hot sauce ready to splash to go ahead. You many also have it with a snack, or crisp salad or a drink.

Ingredients

Extra virgin olive oil: 2 tablespoons
Boneless skinless chicken thighs: 1 1⁄2 lbs
Onion: 1 large chopped
Celery ribs: 2 diced
Andouille sausage: 1 lb (cut into 1/4 inch slices)
Green bell pepper: 1⁄2 diced
Dried thyme: 1⁄2 teaspoon
Dried oregano: 1⁄4 teaspoon
Red bell pepper: 1⁄2 diced
Salt: 1⁄2 teaspoon
Cayenne pepper (optional): 1⁄4-1⁄2 teaspoon
Medium shrimp, peeled and deveined: 8 ounces
Long grain rice: 1 1⁄2 cups
Sweet paprika: 1⁄4 teaspoon
Tomatoes, chopped, with juice: 1 (14 ounce) can
Chicken broth or stock: 2 cups
Chopped fresh parsley: 2 tablespoons
Finely chopped: 3 green onions

How to make Chicken and Shrimp fried rice?

•    Preheat oven to 350 degrees F.
•    Take a large pan or Dutch oven.
•    Brown chicken on both sides in hot oil
•    Remove and drain
•    Add onion, andouille, bell pepper, celery, thyme, paprika, oregano, salt, and cayenne pepper to the pan.
•    Cook and stir for nearly 5 minutes,
•    Let onions turn tender.
•    Add tomatoes with juice, rice, and broth.
•    Bring to boil.
•    Place rice mixture in a oven-proof casserole or baking dish.
•    Top it with chicken.
•    Use foil to cover and bake at 350 degrees F for 40-45 minutes or until chicken and rice turn tender.
•    Stir in shrimp, green onions and parsley.
•    Cover and cook for more 5-8 minutes or until shrimp curl and turn bright pink and serve.
